History: After formal training at The Culinary Institute of America at Hyde Park, and a distinguished restaurant career in New York City, Chef Salvatore Calisi has recently opened his first restaurant in Morgan Hill, Odeum Restaurant.

Philosophy: Chef Calisi combines Roman and Greek cuisine with Spanish influences, and includes his creative and fun flair to traditional dishes. The Chef spares no expense with the best octopus imported from Spain and the salmon imported from Scotland, fresh local organic vegetables, and grass-fed beef from Australia and the Midwest, yet provides his customers with a reasonably priced menu, fit for every budget.

The restaurant is located in The Granary, a certified LEED Gold building. It seems only fit that the “green” restaurant, which uses solar power to sustain its operation also boasts an on-site garden and orchard, used to provide the freshest herbs, vegetables and fruit.
