I read the Dispatch online as I cannot get home delivery to Israel. Lots of my family live in San Martin , Morgan Hill and Gilroy.
Your info about kosher is incorrect. No orthodox family has two separate kitchens, or refrigerators. Most try to use a seperate oven level, or a toaster oven. If the kitchen is huge, maybe a different counter. But most orthodox families are middle class or less, and could never afford what you describe. I am orthodox. I have one counter, so I wash it down good between preparing meals. I have one sink, so I have two plastic tubs. I have one oven, so I bake using lots of aluminum foil.
At Passover everything most be throughly cleaned and other separate dishes used. Some families close down their kitchen and use a shed for cooking for the week.
Orthodox Jews do not eat in non-kosher restaurants and chicken is considered meat. As it is not red meat, some wait less than 3-6 hours after eating it before having dairy.
Maybe next time I visit there will be a kosher restaurant in Gilroy!
