Working on smoking the brisket, all set for the start of football season

It’s a major undertaking to try and perfect the BBQ recipe for beef brisket. Miss Jenny and I have the Mango-Chipotle Baby Back Ribs and the Carolina-style Pulled Pork down, but the brisket is tricky and I’m burning a lot of pellets on the Traeger grill trying to perfect it. Cooked up the best one yet last weekend after making a brothy injection and patting on two dry rubs in between a coating of mustard. Smoked it, wrapped it, sprayed it with butter, let it rest and 15 hours later we carved it up. Tender, great texture, but the flavor wasn’t quite the rich beef melt-in-your-mouth I’m looking for. So, it’s back to the drawing board for fine tuning ingredients and time and temperature to get it right. Then I can serve it up for the poker boys and have an Indian summer BBQ with friends and a great bottle of 2008 Merlot from Solis Winery.

Mt. Madonna School presents The Sawubona Ngikhona Project

A Values in World Thought presentation (The Sawubona Ngikhona Project) by Mount Madonna School’s 12th grade students will be held Wednesday, Sept. 18. The presentation will be about their recent experiences in South Africa, including interviews with former South African President F.W. de Klerk, Archbishop Desmond Tutu, author Peter Harris and others; visits to the Botshabelo childrens AIDS village, service work for the Philani Childrens Health and Nutrition project, and meetings and performances with students at several high schools. The students also traveled to Swaziland and enjoyed cultural exchange!

Ultra lessons

 Runners are a different breed to begin with. The single most common question people ask of runners is “Why?” “Why do you run that far? That many days? That many miles a week? Why would you run at all”? There are many reasons, but a few of them include: for fitness, to reduce stress, to get away by myself, to get away with friends, to race and compete, and to see what I’m capable of doing.
